The start of school is quickly approaching and we are still trying to incorporate some last minute summer things into a span of 4-5 days. Late nights, hanging with friends, backyard grilling, riding bikes around the neighborhood and treating ourselves to some delicious sweets.
My summers growing up were spent hosting a lemonade or sno-cone stand to raise enough money to go to a theme park. Sometimes we would raise enough to attend several times throughout the year. I’m hoping that when the kids get older I can teach them to host and make money with their own stands, but this summer we will stick with the homemade desserts to be enjoyed indoors. As I got older my summers usually included a nice run outdoors. You may not know that I have actually completed 3 full marathons and several half marathons in the past 10 years. I think it’s time to get back to a quick jog with the kids outside.

I decided to chop up the bars and incorporate them with some vanilla ice cream, milk and some blueberries. It was a quick treat that all of us enjoyed. You can even send the kids off to school with a bar for breakfast on the go or an afternoon pick-me-up snack. I already have some set aside to eat alongside my yogurt as well.

Combine 1 chopped bar, blueberries, ice cream and milk into a blender and pulse until well blended. Divide equally into 2-3 cups and then top off with the rest of the chopped bar pieces.
