A couple of years ago my family and I went to Montana for a week. While we were on our trip we visited Yellowstone, hiked and went white water rafting. However, the one thing that stuck with me the most besides white water rafting was a burger from a local restaurant.
The difference between this burger and a normal beef burger was that it was made with buffalo meat. I was in love with the first bite! I think it made me feel even better knowing that it was healthy. Well, it made me feel better when I was eating the burger with fries.
I’ve come to realize that I think I’ve only made bison burgers once since that trip. I found a lovely shack (Bubba’s Texas Burger Shack) under a freeway in Houston that serves Buffalo Burgers. They are divine and I highly recommend seeking it out if you are ever in Houston. ENJOY!
Bison Burger
Serves 4
Ingredients:
1 lb. ground bison
1 lg egg
2 sprigs of thyme
1/2 tsp ground black pepper
1/4 tsp salt
1/4 tsp garlic powder

For the onions:
1/2 lg onion, sliced
1 Tbsp unsalted butter
4 Tbsp white wine
Preparation:
In sauce pan over medium heat melt the butter for the onions
Add the onions and saute for about 3-4 minutes then top with the white wine
Cook on medium heat for about 10-15 minutes stirring occasionally
While the onions are cooking add all of the meat ingredients into a large bowl
Mix the mixture with your hands and form 4 round individual patties
Heat a skillet over medium heat and cook patties
Cook for about 4-6 minutes and then flip and cook for another 5 minutes
Check the temperature of your meat to how you want the burger cooked
When meat is done top a bun with lettuce, tomato, meat, and onions
Internal Temperatures of Bison: (its best served rare or medium rare)
135 degrees is rare
145 degrees is medium rare
155 degrees is medium
