Looking for a simple grilled chicken recipe try this Balsamic Grilled Chicken with Strawberries & Goat Cheese recipe.
School has just started back up and the summer is basically coming to an end. It really did fly by so fast and I feel like so much has happened in the past couple of months. Ever since we had Olivia we have been wanting to get closer to family. Of course we thought it would be great to move in a couple of years and just enjoy our time in Houston. Well, God had other plans for us. Shaun and I are moving to West Texas (Lubbock) this next month. Shaun is from a small town outside of Lubbock and Texas Tech is where I went to college. Lubbock may be flat and surrounded by cotton fields but it is our new home and a place we have grown to cherish and LOVE. As of right now I’m studying for the Texas Real Estate Exam. I like that I will be able to spend more time with little Livi but still be able to incorporate some extra funding for living expenses and travel.
With everything so hectic right now with packing and going to visit my parents for Labor Day for the Goat Cook Off Festival, we are short on time with meals. This meal was created with ease in mind but something that would be flavorful as well. I usually try to stay clear of my fruit mixing with other ingredients but when I saw this chicken dish with the goat cheese and strawberries I knew it was a done deal. Not to mention that it’s a pretty simplistic dish and the star ingredient is the chicken.
The chicken that I used in this dish is from Just BARE Chicken. Their mission statement is as follows:
To provide natural, healthy chicken like nature intended. Unadulterated. Unadorned. Simply delicious. With a straightforward, honest commitment to respecting our people, animals and planet.
No added hormones.
Vegetable and grain fed.
No animal by-products.
Traceable to the family farm where raised.
Nothing less. Nothing more.
The amazing thing about Just BARE chicken is that you can actually track each and every package from the grocery store back to their family farmers. WHOA that’s huge especially when you like to know where you are getting your food. I’m all about supporting local farmers these days and knowing what I am getting first hand. If you would like to start using Just BARE Chicken please check out this online guide to where you can locate it. If you are in the Houston area you will find it at most local Super Targets and Targets. If your city is not listed don’t worry because there are online groceries listed as well.
This recipe comes from their Five-Ingredient Recipe Cookbook located on their site. The creator of this dish was Crystal S. of Altoona, WI.
