School has just started back up and the summer is basically coming to an end. It really did fly by so fast and I feel like so much has happened in the past couple of months. Ever since we had Olivia we have been wanting to get closer to family. Of course we thought it would be great to move in a couple of years and just enjoy our time in Houston. Well, God had other plans for us. Shaun and I are moving to West Texas (Lubbock) this next month. Shaun is from a small town outside of Lubbock and Texas Tech is where I went to college. Lubbock may be flat and surrounded by cotton fields but it is our new home and a place we have grown to cherish and LOVE. As of right now I’m studying for the Texas Real Estate Exam. I like that I will be able to spend more time with little Livi but still be able to incorporate some extra funding for living expenses and travel.
With everything so hectic right now with packing and going to visit my parents for Labor Day for the Goat Cook Off Festival, we are short on time with meals. This meal was created with ease in mind but something that would be flavorful as well. I usually try to stay clear of my fruit mixing with other ingredients but when I saw this chicken dish with the goat cheese and strawberries I knew it was a done deal. Not to mention that it’s a pretty simplistic dish and the star ingredient is the chicken.
