Bacon pistachio goat cheese balls for the perfect start to any party or gathering. They are easy to prepare and they are full of flavor.
This past weekend I took a total of 5 naps in 3 days. I took two on Friday before 1pm and I finally think I am caught up on my sleep. Coffee is no longer a necessity to keep me awake so all I need is just a nice comfort drink in the morning. I was also able to put my house back together after not being at home this whole last week.
I caught up on my trashy TV shows like Real Housewives of OC and The Young and the Restless. You could say I’m a TV junkie. Meals and snacks were actually made in my house, instead of cookies and take out food.

My night consisted of climbing into bed past 2am and I wonder how I ever did it 7+ years ago. Bedtime now is around 10pm with a wakeup call around 6:45. I’ve always enjoyed my sleep and MUST get at least 8 hours.
While cleaning out my refrigerator to make way for my grocery run this weekend I stumbled upon some goat cheese and bacon. For the past couple of months I’ve wanted to make goat cheese balls and I finally had the time and ingredients to do just that. Truthfully I’ve never added bacon to the outer coating but decided what the heck on this round. In fact I think the bacon flavor added a great punch to the overall bacon pistachio goat cheese balls.

In a food processor combine the bacon, pistachios and salt. Blend until you reach crumb consistency. In a small bowl mix both cheeses together. Roll a little of the the cheese into a ball and then into the bacon and pistachio crumb mixture. Store in the refrigerator until ready to eat.

These were out of this world! They were a bit tangy for me, so I topped them with a tiny drizzle of honey – the bit of sweetness balanced it perfectly.

I will be making these today. I have some truffle honey which I will drizzle 4 or 5 drops on each of the appetizers. Great Keto fat bomb. May also be great with smoked salmon instead of bacon.
I top these with a drizzle of local honey. The touch of sweetness perfectly balances the tang of the cheese and the saltiness of the bacon and nuts. They are a family favorite!
