Now that Thanksgiving is over I can fully focus on my favorite holiday which is Christmas. I love the meaning and the most important reason is that we celebrate the birth of our savior. We are hosting this year at our house and I am so excited to get out the decorations and the meal preparation under way.
By the time Christmas comes around we are usually sick and tired of all the turkey, green bean casserole, dinner rolls, mashed potatoes and endless plethora of desserts. We usually pick a theme and I think I am going to go with Mexican food this year. Why Mexican food? Well it is my favorite type of food to eat and there are so many options out there including chips and salsa with margaritas.
Two weeks ago I received my monthly bag from H-E-B for their primo picks. There wasn’t a specific theme with this bag and so I decided to put some of the items to work on my Christmas planning. One of the things that I received was a jar of whole jalapenos already cut in half on one side with the seeds removed. My family is a huge fan of stuffed jalapenos that are wrapped in bacon. For this recipe I wanted to take a different twist on the classic stuffed recipe and include chicken and bell pepper into it.
Preheat oven to 350 degrees.
Cut the jalapeños in half on one side to remove the seeds.
In a small bowl combine the chicken, cream cheese, Mexican cheese, bell pepper and salt. Stir so the whole mixture is well combined. Using a small spoon stuff the jalapeños filling them to the top.
Place them on a baking sheet and cook for 5 minutes and then broil for an additional 2 minutes.

We do Mexican themed Christmas Eve with friends every year – homemade tamales, enchiladas, guac, churros – it’s pretty amazing. One of my favorite things! These will have to be added to our spread this year! Looking forward to meeting you in a few days at the retreat!
