Can you believe that August is almost over!
I feel like the summer just fly’s on by and that I don’t have one anymore since I still work five days a week plus some weekends. I swear either Shaun or I need to win the Lottery soon. That way, I can open up a little cafe/bakery or wine bar in a small town, and we can enjoy life on a ranch, lake, or mountain home. I promise I am not that picky and would be willing to take one of those choices. We could even include a back house for any of you who want to come and visit. Kids and pets are totally welcome. I bet you want me to win the lottery even more now, huh? If I could just get myself to go to the store to buy a measly ticket.
Have I ever mentioned that I have an addiction to anything with bread? Hence why I think I would love to have a bakery. I bought some whole wheat pizza dough from Trader Joe’s this past weekend and knew that I wanted to do something fun. My first thought was to do a calzone and then quickly changed to doing a stuffed pizza roll. I love ordering an all vegetable pizza from my local pizza store topped with crushed red pepper and dipped in ranch. Call me weird, but I love pizza and ranch. Don’t judge! Why not roll up your favorite pizza toppings into pizza dough for an all-out pizza bite full of yumminess.

Preheat oven to 425 degrees.
In a medium bowl combine olives, mushrooms, bell pepper and tomato and mix it up.
Lay out the pizza dough onto a floured surface and expand the dough using your hands until it reaches a rectangular shape.
Use a pizza cutter to cut medium size squares all over the dough.
Place a small drop of sauce onto the middle of each square.
Top with mozzarella and vegetable mixture.
Pull up all four corners very carefully and pinch them together to form a solid ball.
Place into a greased baking dish and continue until all pizza balls are finished.
In a small bowl combine Parmesan cheese and Italian seasoning.
Brush the top of each ball with olive oil and a little pinch of seasoning for each one.
Place in oven for 15 minutes or until golden brown.
Serve with the heated left over sauce or my favorite ranch dressing.
