I have a confession to make. I’m totally addicted to Downton Abbey! It’s currently on its Fourth Season but I didn’t get hooked until this past December. Everyone was always talking about the show and I love a good one that draws you in and you can’t even leave the couch to do something else.
That is Downton Abbey for me.
If you do watch the show you will know exactly what I am talking about with the drama. Not to mention what happened on the latest episode. I won’t spill any beans just in case you haven’t seen it or you start watching it soon. With all of that being said I’m usually in a pinch for dinner on Sunday nights. After cooking all week and taking photos, I sometimes just want to sit down to a quick and healthy meal to watch TV.
I teamed up with a couple of other bloggers this month to bring you some healthy meals using Alexia’s new line of Smart Classic Products.

– 98% fat free
– 0 grams trans fat
– 100 calories per serving
– roasted
I used their tri-cut potatoes with sea salt for this easy recipe. Everyone knows that I’m a Mexican food fanatic and I had to add a little of that flavor to these potatoes. To keep with the healthy theme I used lean ground turkey as well as some fresh vegetables topped with a little bit of cheese.

Preheat oven to 450 degrees. Place potatoes on a non-stick baking sheet and cook for 20 minutes rotating halfway through the cooking process.
Add ground turkey to skillet over medium heat. Cook until brown and then add water and taco seasoning mix. Stir and let it simmer for 3 more minutes. Remove from heat.
To make bowls place potatoes down and then follow with turkey, avocado, tomatoes, sour cream and cheese.

I looooove Downton Abbey! I came in 2 seasons late, but powered through all the episodes in a weekend. I couldn’t stop watching. It’s just flawless. As are mexican bowls. Always.
I have yet to sit down and watch Downton Abbey! maybe I’m scared I’ll get sucked into it haha. mmmm my favorite snack would be… well my favorite HEALTHY snack would be, green grapes!
