Dinner sometimes is a well thought out process with complicated ingredients. It can take more than an hour to prepare or less than 30 minutes depending on the difficulty of the dish. Everyone gathers around the table and you start to hear the whines of I don’t want to eat this. It’s upsetting to hear and especially heartbreaking to know that you’ve poured your heart and soul into the dish and no one wants to eat it.
Yes, that happens quite frequently with a daughter who is starting to get picky. Example: Two nights ago she loved green beans and hated broccoli. One night ago hated green beans and loved broccoli. It’s a never ending cycle with her at the moment and I never know what to fix for dinner.
I looked back into my archives this past week and found this simple Taco Pizza recipe. The photos weren’t all the bad, but I knew that they could be better. It also gave me a chance to remake this meal and have an excuse for pizza night again.
This Taco Pizza takes less than 30 minutes to make and there is no dough required for this recipe. You can even customize it for the kids by leaving off the black olives or avocados. To step it up a notch on the heat factor just add some sliced jalapenos or sprinkle some red pepper flakes. Just make sure you keep the loaves separate to keep the kids mouths from burning. So, when Friday comes around and everyone is craving pizza, break out the ingredients for this simple No Dough Taco Pizza dish.

Preheat oven to 325. Heat large skillet over med/high heat and add ground turkey. Cook until brown and add the black beans. Sprinkle with some salt. Remove from heat and stir in cheddar cheese and 1/2 cup of the colby jack cheese. Cut the loaf in half and brush with olive oil. Place meat and cheese on top of the bread loaves. Cook for 10 minutes. Remove and place 1/2 cup of the colby jack on each loaf and place back in oven for 5 minutes. Remove and let it cool for a couple of minutes. Top with black olives, tomatoes, and avocado. Optional: crushed red pepper and dipping sauces like salsa and ranch dressing
