Simple No Bake Monster Bars for a quick afternoon treat.
The crud has officially hit our house this week. It started off as a small cough with my daughter, then trickled down to my nephew and yesterday it hit my son. I’m starting to feel icky but can’t quite tell if it’s from being couped up in the house, being tired or the sickness slowly creeping its way to me.
We need something positive or something to cheer us all up. I finally succeeded with these No Bake Monster Bars. Yes, I had to make three different rounds of this simple dessert to finally get them to look perfect. Think of monster cookies except taking all the ingredients out for the baking portion and making them look more like a Rice Krispie. Voila. On my second round, I added the chocolate chip morsels to the entire mixture while it was still warm. The monster bars were a not so pretty brown color. If you want chocolate bars feel free to add them but possibly add more chocolate to cover the entire batter. I would still recommend adding the m&ms at the end to not cover their color with the chocolate.
The hardest part was making the kids wait patiently for all three rounds so that I could take photos. Every day my nephew would come home from school asking if he could have a square to eat. A week later and the poor kiddo still hasn’t tried one out. It might also be because his tummy is full from all his Valentine’s Day candy.
You can bet that we will ALL be diving into these bars to help out get out of the sickness funk.
On a low heat melt the peanut butter and marshmallows in a large skillet. Remove from the heat source and stir in the rice krispies and oats.
Pour into a greased wax paper lined baking dish. Pat the mixture down to ensure it goes into all corners. Sprinkle the m&ms and chocolate chip morsels and pat them down to secure them into the bars. Let them cool for 20 minutes.
