Four years of marital bliss. Ok, most of it is blissful but of course like every other couple we have had our trying times. Now we don’t fight with one another but we do have agree to disagree moments. We left out sweet little one at home to be cared by loved ones while we jumped on a plane to head to New Orleans.
I’m excited about the culture that New Orleans has to offer as well as the good food. My husband and I both love seafood and I can’t wait to fill up on it while I’m here.
In the meantime, I’m sharing this easy Mint Chocolate Chip Cookie Dough Popsicle recipe with you. We just got back from the Woodlands where it was hot and humid and I guarantee you we are sweating just as much in New Orleans. So while I’m going around the city eating it up I will be thinking about these popsicles and trying to keep cool.
My niece was visiting us a couple weeks ago and we made these Strawberry Cream Popsicles and I decided to take her version up a notch by making these Mint Chocolate Chip Cookie Dough Popsicles. It’s a mouthful of words and it’s a mouthful of goodness that you don’t want to miss out on. If your kids aren’t big fans of mint then I highly recommend just omitting that from this recipe. You can even skip the cocktail cups and go straight for a Popsicle mold but I like doing them a different way and we just happen to have cocktail cups in our pantry.
These will also be a huge hit with your kids because they can eat raw cookie dough because it doesn’t have any raw eggs in the mixture. Hope all the little cookie balls make it into the ice cream batter.
