Everyone has a creative side to them. Mine right now is coming from Pinterest. One of these days I’m going to come up with something that will just amaze everyone. You just might be waiting a while.
The other day I found a photo for meatloaf cupcakes. I swear I was just talking with Shaun a couple of weeks ago about wanting to make meatloaf. After I saw this recipe I knew that I must put it into action.
I mean seriously how cute is this cupcake. It would be perfect for entertaining or a supper club party.
The best tip for the piping is the one with a wider opening. I tried to do one with a fancier top but the potatoes didn’t want to come out as smooth.
Did you hear about the chicken wing cupcake that was on the news this week just in time for the BIG GAME this weekend? I think for now I will stick with this meatloaf cupcake instead.

Meatloaf Cupcakes – adapted from First Look Then Cook
Yield: 6
Ingredients:
1 tsp olive oil
1 lb lean ground beef, uncooked
2/3 cup onion, diced
2 Tbsp ketchup
1 Tbsp Worcestershire sauce
1 garlic clove, minced
1 cup garlic and onion croutons, crushed
1 large egg
1/4 tsp pepper
1/2 tsp salt
Preparation:
Preheat oven to 350 degrees.
Heat a large skillet over medium heat and add olive oil and onions. Saute the onions for about 2-3 minutes and then remove from pan.
Place all of the ingredients into a large bowl and mix well with hands. Stuff the mixture into a 6 cupcake pan that is greased.
Cook for 20 minutes or until internal temperature reaches 160 degrees. Top with mashed potatoes.
For the potatoes:
4 small russet potatoes
2 Tbsp unsalted butter
1/4 cup milk
salt and pepper to taste
Preparation:
Wash and peel the potatoes and bring to a boil in water. Cook them until they are tender about 15-20 minutes. Drain the pan and add potatoes to a new bowl. Add the rest of the ingredients and use a hand mixer to beat until they are smooth.
When they have cooled for a bit add them to a pastry bag or any other type of icing decorator. Pipe on top of each meat loaf cupcake and top with green chives and cheese.
