Ingredients:
1 box velveeta shells and cheese 2% milk
1 lb. extra lean ground beef
1/2 medium onion, diced
1/2 tsp salt
1 14oz. can of diced tomatoes
2 Tbsp margarine
1 Tbsp flour
1 Tbsp parsley flakes
1 cup cheddar cheese, shredded
Preparation:
Preheat oven to 350 degrees
In large skillet on medium heat, brown and drain the beef
Add onions, margarine, and salt; saute for about 3 minutes
Stir in tomatoes, flour, and parsley flakes and simmer for 10 minutes
Cook the velveeta shells according to package and then drain and add cheese packet
Pour into a buttered/sprayed 2 qt. casserole dish
Pour in the meat and tomato mixture and mix it all up
Top it off with 1 cup cheddar cheese and cook for 20 minutes
