Another one bites the dust. Well, in this case, it’s me… two kids came down with a viral infection, and just a few days later I started showing the same signs. Did I mention that we are supposed to be in Austin, Texas right now getting ready for my sister in law’s wedding? Instead, we are taking off a day later in hopes that the family will perk up including me.
Now that I’ve rambled on about being sick let’s turn our focus to this EASY Lemon Pepper Salmon Foil Packet recipe. This past week I was able to work from home one day and for lunch, I turned my attentionon to a healthy, low carb meal. This salmon dish takes 5 minutes to prepare and 25 minutes in the oven. While you are waiting for it to cook, you can sit and relax on the couch while it bakes away in the oven.
This Lemon Pepper Salmon Foil Packet is paired with green beans as the side. Feel free to substitute it with asparagus, carrots, potatoes, mushrooms or squash. I’ve even provided the nutrition facts below the recipe and that includes the salmon with the green beans.

Preheat oven to 400 degrees F. Place three lemon slices on a sheet of foil paper. Top with the salmon on one side and the green beans on the other. Season with salt. In a small bowl mix together the butter, garlic and lemon pepper. Spread the butter to the top part of the salmon. Wrap up the salmon creating a pouch and place in the oven. Bake for 25 minutes or until salmon comes off in flakes with a fork. Remove from the oven and eat from foil or set it on a plate.

omg I hope you get better ASAP so you can head off to the wedding!! I neverrrr get sick and woke up feeling so gross today; obviously on a Friday! In any event, this salmon is so up my alley! Such a great weeknight dinner!
Hello there, I just stumbled upon this recipe on pinterest and my first thought was “mmmmh”, but my second was “Lemon and aluminium foil??!!”
As far as I know it’s very unhealthy to use aluminium foil (never good to use it if you are environmentally friendly) with acid foods. It kind of dissolves the aluminium an leads it into the body. Like the one used in deodorants it can harm you in many ways.
You might want to use parchment paper or something.
