Who’s ready for Christmas? I know we haven’t hit Thanksgiving yet, but I’m ready for Christmas. Typically, I hold off on the decor until after Thanksgiving, but I just can’t do it this year. I’m ready for the Mariah Carey songs, the street to be lined with lights and decor, and for everyone to be in a jolly mood.
With the holidays right around the corner, my attention is now focused on holiday baking. I’ve said it before, but I love baking. I have more goodies coming your way but let’s focus our attention on these delicate Holiday Peppermint S’more Cookies.
I cheated on the cookie portion of this recipe. The cookies are pre-made and arrived on my front porch from Amazon about a week ago. Now you will need marshmallows, green sprinkles, white and regular chocolate baking bars, and peppermint baking chips.
After a quick broil in the oven, you get to create the infamous smash of the marshmallow just like a regular s’more. You can’t forget the chocolate with a s’more recipe, so next comes the chocolate drizzle followed by sprinkles and peppermint baking chips.
These were a big hit at my office and the kids begged me to make another batch the next day. I think SANTA is going to love his Peppermint S’more Cookies this year.

Place oven on broil setting. Place the cookies on a baking sheet and top with a marshmallow. Broil for 1 minute or until slightly brown. Spray a fork with non-stick spray. Smash the marshmallow down letting it cover most of the cookie. In two separate bowls melt the chocolate in the microwave on 15-20 second intervals. Once chocolate is melted, pour it into separate piping bags. Drizzle over the top of the cookies. Top it off with green sprinkles and peppermint baking chips. *If you don't have piping bags use a Ziploc bag.
