I’m so happy that all of the farmers markets are in full swing and we finally made it to our local one this past Saturday. This one has only been open for the past couple of weeks but it’s already a bustling place to be on Saturday mornings. In fact we were running behind and showed up 45 minutes after it opened and let’s just say that a lot of the produce and other goods were already picked over.
However, I did manage to purchase a homemade cinnamon roll the size of my hand, fresh bread, peaches, corn, okra, tomatoes and much more. I knew instantly that these peaches were going to be put to use in this Blueberry and Peach Kale Salad. I already had the blueberries at home and my new favorite blend of kale just waiting to be used. It’s actually called Kale Italia from Earthbound Farm. It’s a blend of baby kale, tangy mizuna arugula and radicchio.
My husband prefers your typical lettuce blend, but was impressed with this new kale blend. In fact I think he might prefer it over regular lettuce now.
You can pair this salad with any type of vinaigrette but I used the rest of my blueberries to make a homemade blueberry vinaigrette. It’s perfect for this salad with the fresh fruit. You can even substitute other fruits like strawberries and oranges if you prefer those.
Combine the salad ingredients into a large bowl or plate.

Note: Vinaigrette is best used the day that it is made.
