Start your lunch off with this healthy Autumn Salad in a Jar recipe.
Last night we rounded up the kids, packed them in the car and headed to our local Fair. It had a petting zoo, rides for everyone and of course a huge array of food vendors both local and ones supported by the carnival. After stopping at four different booths we finally ended up with one slice of pizza, one footlong hot dog, one long corn dog, twisted taters and a pulled pork bbq sandwich. I almost forgot to mention the ONE water bottle that we also decided to share. Luckily, after all that food we digested we were able to walk around in circles looking for games and rides for the kids to spend their tickets on.
It’s been years since my last fair and I’m surprised at how much it costs for a family to attend. Just to walk into the actual fair cost us $40 for our family. Another $30 on food, $10 on games and $20 on tickets. When did the games go from $1 to $5? It’s almost like we went to Six Flags for the day, but instead we went to the Fair. Looks like I’m going to need to save up next summer before it comes back to town this time again next year.
Today, I’ll be enjoying this healthy Autumn Salad in a Jar for lunch and possibly dinner. My detox from the super long corn dog and twisted taters has officially hit. You can add your own dressing but I highly suggest a creamy vinaigrette dressing for this salad. I fell in love with a champagne caper vinaigrette one that can be found at your local grocery store.
Layer everything in a jar starting with the dressing and then following with the rest of the ingredients.
Best eaten same day it is made.
