We just got back home to Texas from a family visit to Milwaukee. This was our first time to Wisconsin and we loved it. While I was there I had to try Wisconsin cheese, spotted cow beer and of course their pretzel bread. We traveled there for our nephew’s baptism and to spend some much needed time with Shaun’s older sister and her family. She was definitely the hostess with the mostess on this trip. Every meal was absolutely AMAZING and I will do my best to replicate some of my favorites from the trip.
During our stay I was introduced to coconut oil and sprouted bread and of course I had to buy some when I got home. I am all for eating better and trying out new things. At the store I managed to pick up come fresh strawberries and raspberries and decided to make this berry lemonade popsicle. The weather may be acting strange but I’m gearing myself up for Summer.
I have been wanting to make popsicles for a while now and was so excited to try out the ZOKU original pop maker. The big decision was what kind of flavors I was going to use. Thank goodness I saw those fresh berries at the store because I was able to make my mind up on the flavor profile and lemonade just reminds me of a lemonade stand during the summer months.
(Follow the Zoku Instructions about freezing the container.)
In a food processor add the first three ingredients with 1 1/2 cups of lemonade and reserve the rest.
Mix until everything is pureed.
Place the mixture in the refrigerator for 20 minutes to allow it to chill.
Remove and pour in 1/2 of the mixture into each popsicle compartment. Allow it to freeze and then add the remaining lemonade to the fill line on the mold. (Do not go past the fill line.)
Allow it to freeze (about 7 minutes) and then remove.
