It has finally cooled off here in Texas and I can say that it feels more like the Christmas season. The presents are wrapped, the house has Christmas lights and the inside is fully decked out in red and green decorations.
I wish I could say that I’m going to sit back and relax but having a 2 week old kind of hinders any type of relaxing. Ice cream was a comfort food for me when I was pregnant and it’s still one now. I love having homemade peppermint oreo ice cream in the freezer that I can eat at a moments notice.
In a large bowl mix the sugar, milk, whipping cream and vanilla with a hand mixer. Cover with saran wrap and place in refrigerator for at least 2 hours.
Turn on ice cream maker and pour in the mixture. Let the mixture churn for 15 minutes and in the last 5 minutes add the oreos and peppermint.
Place in air tight freezer containers and place in freezer until ready to serve.
