This week I am actually getting back to my old self and looking forward to getting back into the kitchen. I think Shaun is happy too so that he can quit eating out for dinner every meal. Every couple of weeks I will try to update my readers on my pregnancy and what is going on with it.
Preheat oven to 350 degrees.
In large sauce pan over medium heat add the turkey and start to brown. While turkey is cooking add the couscous to a small pot and cook according to package instructions. When turkey is almost brown drain the juice and add the onions. Cook until onions are tender. Then add 1 can of tomato sauce, couscous, salt and cayenne. Stir so that everything is well combined.
With an ice cream scoop or large spoon fill each bell pepper halve with the stuffing. Place on a baking sheet. Get the other tomato sauce can and spoon some sauce over each bell pepper. Cook for 30-35 minutes and in the last 5 minutes remove the bell peppers and place a thin slice of mozzarella on top and place back in oven.
