Everyone has seen spiralized food by now. After looking at this nifty machine for the past year I finally broke down and bought the Paderno spiralizer. We’ve now had it for about a week now and I’m completely sold on what it can do and I basically want to spiral everything in my pantry and fridge.

Not joking.

So after picking out a delicious and juicy pork chop to grill this past weekend I decided it was going to be paired with this easy Vegetable Zoodle Salad. The dressing is a very easy Lemon Vinaigrette and it basically comes from ingredients that you already have on hand. This vinaigrette would also pair nicely with any salad that you might make at home.

My daughter loved the zoodle salad so much that after eating all the spiralized vegetables she was submerging her fingers into the leftover dressing.

If you have problems getting your kids to eat vegetables I highly recommend buying one of these spiralizer machines. Every vegetable/fruit we have used my daughter has eaten and she didn’t even give it a second thought. I also put her to work on helping the vegetables/fruits get their curl.

This Vegetable Zoodle Salad is perfect for any dinner or BBQ get together. My tip is to make it ahead of time so the vegetables can marinate in the vinaigrette for at least 30+ minutes.

Vegetable Zoodle Salad

Ingredients

  • 1 zucchini
  • 1 cucumber
  • 1 carrot
  • 1 apple (any type)
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 1/4 teaspoon minced garlic
  • 2 tablespoons red wine vinegar
  • salt and pepper to taste

Instructions

Spiralize all vegetables and fruit using the small blade from the spiralizer.  Place all curls into a large bowl.

Whisk all the ingredients for the vinaigrette into a small bowl.  Pour some of it over the vegetables and place in refrigerator for at least 30 minutes.
