I love veggies! To be honest, though, I haven’t cooked a whole lot of them lately. So, this past weekend Shaun and I went to the grocery store to round up this week’s groceries. I made myself get about five different types of vegetables to eat during the week.
As I was sitting at home trying to think of a dish to make with the vegetables I bought, I remembered this lovely dish for broccoli.
It was about three years ago I was visiting my sister and her family in Marble Falls, TX. My oldest sister and brother in law belong to a dinner club. This supper club is so much fun and very entertaining. On several different occasions where I was able to attend, we have done a scavenger hunt and a breakfast dinner in our pj’s. Well, on this particular weekend, the host happened to be the owners of Camp Champions right outside of Marble Falls. Not only did we dine next to the lake, but we were able to do a bungee fall on a new toy that they had just received for the camp.
We then went inside to a fabulous meal cooked by the two owners. Now on these dinners, they like to go all out. We started with appetizers and drinks and then on to prime rib and the rest of the dinner followed by dessert. Well, they had made a broccoli dish to compliment the prime rib, and when I asked what all they put in it, they just replied, “red pepper flakes and garlic.” Instantly I was hooked on this easy dish and since then have made it several times. If you like things less spicy, I recommend limiting the amount of red pepper flakes to the dish. ENJOY!
In medium sized sauce pan over medium heat add olive oil Add the garlic and red pepper flakes to the oil Now drop in the broccoli and stir until well coated Cook for about 3 minutes Add the water to the pan and top with cover Cook 5-7 minutes or until tender Use slotted spoon to remove broccoli from pan Add to bowl and season with the salt
