(This is another OLD RECIPE that I brought back to share and update the photos. I even added it in the recipe box for easy saving and printing. This was my 2nd recipe that I ever made for A Zesty Bite. Hope you enjoy this prosciutto wrapped asparagus as it is an old favorite recipe.)
Tonight, I decided to make a side dish to go with the left over salmon. I made prosciutto wrapped asparagus my way. There are a ton of recipes out there for this dish that include all different types of ingredients. I decided to add a cheese spread to the prosciutto to add some more zest.
Preheat oven to 400 degrees.
Lay out a slice of the proscuitto and spread a little of the cheese onto one side. Roll up 4 asparagus stalks and place on a baking sheet sprayed with cooking spray. Repeat with the rest of the proscuitto and asparagus. Drizzle with olive oil.
Place in oven to cook for 7 minutes. Remove and top with grated parmesan cheese. Place back in the oven for an additional 4 minutes.

Yes, yes ,yes!! I have both prosciutto and asparagus in the fridge and no idea what to make with them. Now I do, YAY!

For some reason, I only make these for parties, but I totally need to start making them for dinner for myself. SO good!!
Don’t you love revisiting old recipes/photos! Lol… It humbles me and always reminds me how far I’ve come!
It’s so embarrassing looking at old photos but it is nice to see how far I have come.
