On Thursdays, I have both of my kids at home with me. Those are the days that are spent outside riding four-wheelers, jumping on the trampoline or playing in the dirt. Around lunchtime I’m usually bargaining with the four-year-old over what we can make and it can’t have anything to do with candy. If it were up to her, she would only have chips and cheese for her “well-balanced” meal.

A week ago, I had picked up several different types of cheeses for a grilled cheese sandwich. I finally had the time to make this grilled cheese sandwich and also find the time to photograph it too. Thank goodness you didn’t see the cheesy puff fingers from the kids trying to grab at the sandwiches in the photos.

Now I understand that this is a simple grilled cheese sandwich recipe. There is nothing too glorified about it. However, the reason that I’m sharing it today is that sometimes you need help finding something for lunch or at least something appetizing for kids and adults. That is where this Pesto Prosciutto Grilled Cheese Sandwich will come in hand.

I might just remake this sandwich again today but, hopefully, I will eat in silence.

Pesto Prosciutto Grilled Cheese Sandwich

Pesto Prosciutto Grilled Cheese Sandwich

Yield: 3 sandwiches

Ingredients

  • butter
  • 6 slices of sourdough bread
  • 3 slices fontina cheese
  • 3 slices medium cheddar cheese
  • 6 teaspoons pesto, divided
  • 6 slices prosciutto

Instructions

Spread butter onto each slice of bread. Heat a cast iron skillet over low/medium heat. Add the bread and let it brown on one side. Flip and then spread each slice with about 1 teaspoon of pesto. Layer one side with fontina cheese and the other with cheddar. Let it melt slightly and then add prosciutto to the fontina side. Put the two slices together and let the cheese melt some more.

Repeat until all sandwiches are complete.
