That looks absolutely amazing! Unfortunately, I’m allergic to shrimp, but if I wasn’t….that would be on the dinner table tomorrow night! Beautiful pic and great recipe!

  5. This looks awesome! I love couscous, but have never added shrimp. Looks delicious!

  6. Tiffany says:

This looks great, and I think I have everything but the avocado already! Thanks for sharing!

  7. As soon as I saw the shade of those shrimp-I knew it had to be nothing but delicious avocado in that salsa. Love the pairing with couscous. Great post!

  8. I really like pearl couscous although I have always called it Israeli couscous (I assume it’s the same thing). This is such a simple dish and yet I am sure those ingredients combine to be delicious.

  9. That bowl of deliciousness needs to be in front of me. It sounds really good!

I had *most* of the ingredients for this (had no cilantro, but did have Italian parsley). My couscous was in a 13.4 oz and multi-colored. So i did my best and made do with what i had. Mine didn’t turn out nearly as pretty as yours, but DANG it was good. Even my boyfriend really liked it. Thank you so much for thinking of this.
