Have you seen the show Fixer Upper on HGTV? To say I am slightly obsessed with this show would be an understatement. I love everything about the hosts down to the houses and decorations. I want a fixer upper.
Let me rephrase that last sentence. I ONLY want a fixer upper if it is completed and decorated by Chip and Joanna Gaines from the show. They turn ratty, crappy, fall apart homes into glorified homes that everyone would be happy with.
I love my current home but I want more space. I would love a larger kitchen painted all white, a bigger backyard that looks like a luscious green oasis and a bigger living room. I want to be able to show my children (no mom I’m not pregnant) what its like to grow fresh vegetables and herbs. Some days I want to raise chickens and other days I feel like I would never have the time. Fresh eggs, fresh chicken meat…. I would be one happy little cook. Just think this mozzarella and spinach stuffed chicken would have been easier to make if I had all that chicken meat lying around.
Of course, I’m just dreaming in my head because we are years from having a house that will complete all my wants and desires. We could find an old house but I can’t vision the finished outcome. I see what it has to offer and I’m usually turned away from older homes, but they are the ones with character and loads of fun memories.
Do you own a chicken coop or would you ever consider it? Please tell me the pros and cons.
Preheat oven to 400 degrees F.
Season the chicken on both sides with salt and pepper. Spread each thigh out and in the center place 1/4 cup of spinach on each piece along with 1 tablespoon of cheese. Fold up the sides of the chicken and secure with toothpicks.
Add olive oil to an iron skillet over medium heat. Place the chicken in the skillet and sear on each side for 4 minutes. Pour the balsamic vinegar over the chicken and place in the oven for 20 minutes or until internal temperatures reach 165 degrees F.

I have some friends with a chicken coop and they are *thisclose* to talking me into it! If my husband was all for it, we’d already have one. Our backyard size isn’t ideal for one and we live in a pretty urban area. We’ll see…maybe next year! Love this dinner idea…you can’t go wrong with cheese! 🙂

Yummy! I have a big (4300 sq ft), old (106 yrs) house on 2 1/2 acres. The kitchen is something like 600 sq feet. I have both a chicken coop and a goat barn because I used to have both. It’s great but it got to be too much for me. If you ever want to live near Dallas let me know. 😉
One of my really good friends just moved to Dallas. I think we will be in the Lubbock area for a while.

Fixer upper homes are great as long as you don’t have to live in them during the renovation. My husband and I had that experience with our first home, hello stress! This chicken looks so crispy and flavorful, I love stuffed chicken!
Oh yea I could never live in them during the renovation. I would be crazy and feel like I needed to be in control.
I love HGTV and the fixer upper shoes. I totally want to have a house done by them as well. If I was on my own though, it would stay forever a fixer upper 🙂

I have a coop. We’re between chickens at the moment because hawks killed our last bunch of girls. I’d say that’s the con. Predators are brutal. That’s the only con though. The eggs are phenomenal and going on vacation is no big deal because everyone wants to help out so they can get free fresh eggs. It’s way worth it.
Good to know. We have coyotes in the area and I would feel awful if anything got to them.

Ahhh miss you too! Glad you are still checking on the blog and especially cooking from it. Mom is good and just spent a week with me while my dad hunted.
I have chickens and we do eat them but the chickens run around in our pastures and the meat isn’t like storebought…its very very dark…like brown legs n thighs and its not as tender and its hard to kill them after raising them from eggs but the taste is good. They draw flies also and need a very secure aviary to roost in . lots of pros tho …friendly pets, eat all kitchen scraps and leftovers, great eggs, and safe meat.
