Where oh where did 2014 go? We are officially in the final stretch and it’s literally zooming by before our very eyes. People are last minute shopping and trying to make travel plans before Christmas approaches. Meal prep is well under way and we are adding last minute decoration touches to our home.
It seems that actual mealtime gets pushed to the side because we are so worried about everything else. This holiday season I’ve teamed up with Alexia foods to bring you 5 simple meal inspirations for your family.
As my readers you already know that we love potatoes and teaming up with Alexia just confirmed my love for their food and frozen products. We don’t eat a lot of frozen food in our home but occasionally when we make burgers or other items, it is nice to have something easy to go with it.
Miga waffle bites are first up on my list today. These little babies are so easy to make and perfect for a quick breakfast or snack treat. Growing up in Texas we love our miga scrambles. For this recipe I took out the corn tortilla strips and substituted it with the Seasoned Waffle Cut Fries.

Whether you are cooking a burger or chicken tenders tonight I’ve also got you covered on the Alexia food front. Heat up some Alexia Onions Rings with Panko Breading and Sea Salt to go along with your burger or cut up your chicken tenders and top with honey on a waffle fry. Those were personally my favorite because it’s a short way to have chicken and waffles.

While you are wrapping presents you might want a little snack or another option with that burger. Add a little bit of truffle oil to your fries (I used Alexia Smart Classics Crinkle Cuts) before baking and then top with fresh herbs once they come out. That is a heavenly snack right there and you may not want to share. Sweet Potato Fries with Sea Salt are also perfect with a little aioli dip. I bet you can’t have just one fry.
Now is the time to stop fretting about Christmas and start dinner with some of these Alexia food inspiration meals.

Bake waffle fries according to directions.
In a large skillet saute bell pepper, onion and jalapeno. Beat eggs and milk in a large bowl and then slowly add to sauteed vegetables. Stir until you get scrambled eggs. Remove from heat.
Add a spoonful of migas to the tops of each waffle fry. Sprinkle with a little bit of cheese.
