I’m starting 2018 off right with a Low Carb Sausage Breakfast Casserole. There is something about a dependable breakfast casserole recipe that can be shared with family and friends around the table or something to take for a shower/brunch gathering. Since I’ve been following a low carb/keto diet for the past few months, it was only fair that my first post is a healthy one.

I’ve got about 25 pounds to go before I hit my personal goal weight and a recipe like this one is going to help me get there. It’s packed with pork sausage, eggs, spinach, diced tomatoes and mozzarella cheese. I was even able to prepare it the night before New Year’s so when we woke up all I needed to do was stick the dish in the oven to bake it. The hardest part was making the family wait, so I could take photos of it for all of you. I’d like to say it was family bonding time while mom shot the recipe.

Feel free to make substitutions with this sausage breakfast casserole. You can incorporate your FAVORITE vegetables or swap the mozzarella out with Colby Jack cheese – another favorite of mine. Low Carb Sausage Breakfast Casserole

Yield: 12 servings
Prep Time: 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 10 minutes

Ingredients

  • 32 ounces Jimmy Dean pork sausage
  • 28 ounce can Muir Glen Organic diced tomatoes, drained
  • 1 cup fresh spinach
  • 2 cups Tillamook mozzarella, divided
  • 16 large eggs

Instructions

Preheat oven to 350 degrees F. In a skillet over medium heat brown the sausage. Remove from heat and drain excess juices. Pour the sausage into a large casserole dish. Spread the diced tomatoes over the top followed by the spinach. In a large bowl beat the eggs and then add 1 cup of mozzarella cheese. Pour over the top of the spinach and diced tomatoes. Bake in the oven for 50 minutes and then sprinkle remaining cheese over the top. Cook for an additional 5 minutes and then broil for 1 minute.     *Casserole dish - You can use any large casserole dish, but my size was a 9 by 13.
