Cookie Butter Krispie Balls

Everyone I know probably grew up with rice krispies being a staple in desserts around the house. My love for marshmallows probably helps my devotion to these classic treats.

Marshmallows need to be melted and in original form in all of my rice krispie treats. Something about a miniature marshmallow when biting in that just soothes the soul. OK, I’m taking it too far there but really I like to have some melted to hold everything together and then at the end throw some in for good measure. It’s kind of like chocolate chips with cookies.

This go around I decided to make cookie butter rice krispie balls. Cookie butter has been all the rave for the past couple of years. I recently just found out that H-E-B carries their own version of cookie butter.

I enjoy it with freshly sliced apples and now with these rice krispie balls. I also decided that squares are out and round balls are in for these treats. That makes the treats smaller and you feel less guilty about indulging in 2 or 3 because of the size.

These will definitely be made again because after a couple of hours we no longer had any more for a snack. (Don’t worry we had a cookout and I shared the treats with the guests.)

HEB Cookie Butter

Cookie Butter Rice Krispie Balls

Cookie Butter Rice Krispie Balls

Yield: 2 dozen
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 2 tablespoons unsalted butter
  • 15 jet puffed marshmallows
  • 1/4 cup cookie butter spread
  • 3 cups rice kripies
  • 1/2 cup jet puffed miniature marshmallows

Instructions

Add butter to a sauce pan over low/medium heat.  Melt and then add large marshmallows.  Stir until marshmallows have melted and then add cookie spread.  Stir until lightly melted and then remove from heat.

Add rice krispies and miniature marshmallows to the mix and stir until well coated.

Line a baking sheet with wax paper and create 1 inch size balls using a spoon or cookie scoop.  Roll in between hands before placing on wax paper.

Tip: Spray scoop with non-stick spray and hands so mixture doesn’t stick to hands.
