You can never go wrong with queso. I mean it’s loaded with cheese, tomatoes, spice and chorizo with a big heaping side of lightly salted tortilla chips. Yep, it’s basically my happy place. I almost think I could go eat a restaurant and just have the chips and queso as my meal.
Don’t judge.
A while back I decided to make my own cheesy goodness at home so I could eat it whenever I wanted. Chorizo con queso was born in my slow cooker almost 3 years ago. I decided to remake the recipe and spend a little more time on the photos. Plus it meant that I got to have queso again and I would never turn that down.
