In honor of today, I am letting you know that my all time favorite pie is chocolate chess pie.
In fact, I almost despise all other pies. I’m just now starting to kind of like pecan pie. I know it’s weird.
I was a Sophomore in High School when I ate my first whole pie slice. There was a restaurant on our local town square that served sandwiches, soups, salads and of course pies. Not sure how I was coerced to try it but I was amazed at how it tasted like a brownie. Now I like my slices very plain but if you are a fan of cool whip throw some on the top.

Ingredients:
1 1/2 cup sugar
5 Tbsp cocoa powder
2 Tbsp All-Purpose flour
1/4 tsp salt
1/2 cup fat free evaporated milk
3 lg eggs, room temperature
1/3 cup unsalted butter, softened
1 tsp vanilla
1 9in pie crust, partially baked
Preparation:
Preheat the oven to 325 degrees
In large bowl add sugar, cocoa, flour, and salt
Whisk everything in the bowl and then slowly start to incorporate the milk
Beat in 1 egg at a time and then add butter and vanilla whisking until everything is nice and smooth
Pour into the pie crust (you may not have to use the entire batter) and bake for 55-60 minutes
