2 boxes Puff Pastry sheets (4 sheets)
1 Tbsp butter, unsalted
1 lg potato, diced
1 lb. ground beef (I used 93/7)
1/2 onion, finely chopped
1/2 tsp salt
1/4 tsp pepper
1 garlic clove, minced
dashes of dried sage
1 egg white for wash
Thaw out puff pastry according to box (usually takes about 40 minutes)
Preheat oven to 400 degrees
Add butter to medium sauce pan on medium heat
When butter is melted add potatoes and cook for 5 minutes
In another sauce pan over medium heat add the ground beef and cook until brown
When you add the meat to sauce pan add the onions to potatoes and continue to stir
When potatoes start to soften up add salt, pepper, garlic, and sage; stir the mixture
Add the browned beef to potato and onion mixture and mix it up
Set aside on no heat
Lay out thawed puff pastry and divide each sheet into 6 individual pieces
Scoop the meat mixture and place it in the center of 3 individual pieces and top with other side
Use a fork to pierce the edges of the puff pastry
Place each piece onto a baking sheet and repeat the above steps until the pastry sheets are used up
Pierce the top of the puff pastry 1-2 times so that the center gets cooked thoroughly
Brush with egg white so that it comes out a nice golden brown color
Cook for 18 minutes and then remove and flip the pastries over and cook for an additional 8-12 minutes or until golden brown
Both sides need to be a nice golden brown color
Wow these look incredible. My brother loves meat pie so I think this would be a good one to make next time he comes over for dinner. This goes on the list of must makes. Thanks for posting this.
yummy…yummmy….yummmmmmy! I loved the savoury pastries!! Loved the presentation.
That looks delicious! My daughter & family just moved to London last Friday – I’ll be visiting in a year…for a month! I’ll be sure to look for the Cornwall pastries. In the mean time, I’m drooling over yours.
Cornish pasties with puff pastry?! Now you’ve gone and done it, Meagan — WONDERFUL idea!
P.S. I’m still enjoying your “brownie stack” photo from a couple of posts ago. So cute and creative!
I love meat pies and pocket type things in London – so yummy! Great recipe!
Puff pastry are such amazing bite .. i can never get enough of it !
I just ate some empanadas-but they were not made with the lovely puff pastry you have used here. Wish I was there to try, thanks for sharing this tasty dish.
This sounds delish! I love the combo of potato and beef in puff pastry.
Great story to go with your recipe. First time here, but loving your blog… Terrific body of work.

Thank you for posting this, I’m going to have to try them. I spent some time in England and really miss Cornish Pasties. I recently did a post for a cabbage burger/beirock recipe, and one of my readers asked about using puff pastry rather than bread dough. I linked to this article. I think it would make for a delicious dish! Thanks again! http://sezenyourlife.com/2012/05/15/classic-cabbage-burgers-grandma-would-be-proud/#comment-16898
