Need a quick meal for dinner? Try this Beef Fajita Soup tonight.
In exactly two weeks the schools will be bustling with anxious kids just ready to see their friends and ready to get on with the school year. As a parent, I’m just as excited because that means more time to get things done around the house. The house will be cleaner, we will have actual meals and not things thrown together for dinner time, a set bedtime and daily routine.
However, there will also be those nights where the homework is taking forever and the spouse is running late from work. What’s a parent to do for dinner?
I’ve teamed up with the Texas Beef Council to bring you this Beef Fajita Soup recipe. It’s made with top sirloin beef and all your favorite Mexican fixings and spices. Serve it alongside some jalapeno cornbread or rolled up tortillas. You can even add a little more spice by adding in more chili powder or freshly chopped jalapenos. It’s a great meal that doesn’t need to take a lot of time to prepare. It stores well in the refrigerator and even gets better while the flavors marinate.
So, don’t feel stressed with the start of school and trying to figure out what’s for dinner. Make this Beef Fajita Soup and pour yourself a margarita! You deserve it.

This was good. I used Pork fajita meat that I had leftover, adding it in last 5 minutes to get it warmed. I’d make this again.. added cilantro too.👍🏻
